Chase the flavors

Ingredients
Ghee - 4 tbsp
Whole spices
Onion - 2
Ginger garlic paste - 1/2 cup
Mutton - 750 gms
Green chilli - 3-4
Turmeric powder - 2 tsp
Coriander powder - 1 tsp
Besan - 1/4 cup
Cream - 1/4 cup
Keora water - 2 tsp
Garam masala - 1 tsp
Red chilli powder - 2 tsp
Salt
Water - 2 cups
1) In a kadai, heat the ghee and sauce the sliced onions till golden brown.
2) To the kadai add the ginger garlic paste, slit green chillies and the washed mutton
3) Roast the mutton for 2-3 mins and then add in the powdered masalas.
4) Cover with water and cook for 45 mins on low heat while keeping it covered.
5) Remove the pieces using tongs and strain the gravy and discard the waste.
6) In another kadai, heat some ghee and roast the besan in it and add in the strained gravy.
7) Once the gravy get s thick, add the mutton pieces back.
8) Finish the nihari with Keora water and garam masala.
9) Garnish with sliced chillies, ginger juliennes and chilli oil and serve with naan.
