Potato Scotch Eggs


This classic British favourite gets a desi twist to. The soft egg with a crispy bhujia coating makes it the perfect afternoon tea time snack.

Ingredients


French beans - Handful

Ghee - 1 tsp

Cumin - 1 tsp

Ginger - 1 knot

Green chilli - 1

Turmeric - 1 tsp

Red chilli powder - 1 tsp

Potato - 2

Vinegar - 10 ml

Eggs - 4

Aloo bhujia - 1 cup

1) In a pan, heat ghee and add cumin seeds.

2) Add chopped ginger & chili and saute them.

3) Add turmeric, red chili and salt and make a thick masala.

4) Add grated boiled potatoes and combine properly.

5) Soft boil 4 eggs and peel them.

6) Coat the boiled eggs in the potato mixture making a thick coating on top.

7) Rolled the coated egg in broken aloo bhujia and cover it properly.

8) Deep fry till crispy.

9) Serve hot.
