Ingredients
Soaked rice - 1.5 cups
Ghee - 3 tbsp
Whole garam masala - 1 tbsp
Sliced onion - 2
Slit green chilli - 4
Ginger garlic chopped - 3 tbsp
Beans - 1 cup
Carrot - 1 cup
Cauliflower florets - 1 cup
Turmeric - 1 tsp
Coriander powder - 1 tbsp
Red chilli powder - 1 tbsp
Garam masala - 1 tsp
Coriander leaves - 1/4 cup
Mint leaves - Handful
Curd - 1 cup
Method
1) In a casserole cook the soaked rice till 50% and add whole garam masala and 1 tbsp ghee while cooking the rice
2) Strain the rice and keep aside
3) Heat ghee in a casserole and add in whole garam masala and sliced onions. Cook till the onions turn brown and add in the sliced green chillies
4) Add in the chopped ginger garlic along with all the other vegetables and toss
5) Add in the powdered spices along with salt and cook for 1-2 minutes
6) Wash and chop coriander and mint leaves and add to the vegetables
7) Add in the curd and cook for 10 mins
8) Remove the vegetables in another container and layer the biryani with alternate layers of rice and vegetables
9) Garnish with fried onions, mint, coriander and ghee and cook with lid on for another 10 mins till rice are properly cooked
